Sprouted Genius And Tracklements Recipe Collection

Sprouted Genius's crackers really are a cut above the average.

Not just a vehicle for conveying cheese to mouth, Sprouted Genius crackers have loads of flavour in their own right and partnered with the perfect Tracklements' pickle they make ideal treats for outside eating

Tracklements pickles are always delicious and these three varieties - Mango, Mint Jelly and Rosemary Jelly are just right for livening up sandwiches or sitting alongsdide a platter of cold meats

Sprouted purple corn with sea salt & black pepper cracker, topped with fresh mint jelly and broad bean dip (makes 10)

Ingredients:

500g fresh broad beans (or frozen when not in season)

1/2 jar Tracklements fresh mint jelly

1 garlic clove, peeled

50ml/a good glug extra virgin olive oil

To serve: Sprouted Genius, sprouted purple corn with sea salt & black pepper crackers

Method:

  • Cook the beans in a pan of lightly salted boiling water for 3-5 minutes, then drain and leave to cool
  • Skin the broad beans by lightly pressing between two fingers, then whizz in a food processor with the remaining ingredients until smooth, adding a little water to loosen if needed. Season to taste and serve on top of the crackers.

Sprouted amaranth with beetroot cracker, topped with rosemary jelly and goats cheese (makes 10)

Ingredients:

1/2 jar Tracklements rosemary jelly

Crumbly goat’s cheese

Sprouted Genius, amaranth with beetroot crackers

Method:

  • Smear a good helping of the rosemary jelly on each cracker
  • Top with a generous amount of goat’s cheese
  • Mint to garnish and serve

3. Plain amaranth crackers, topped with mango & chilli chutney and prawns (makes 10)

Ingredients:

10 king sized cooked prawns (if using frozen, make sure they are fully defrosted)

1/2 jar Tracklements mango & chilli chutney

Sprouted Genius, amaranth crackers

Method:

  • Smear a good helping of the mango & chili chutney on each cracker

Top with a prawn, black pepper and serve
