Having recently launched on Clerkenwell Road, Sarona Bar and Restaurant is bringing a fresh take on modern Middle Eastern cuisine with a newly appointed Executive Chef and an exciting seasonal menu.
Executive Chef Aviv Lavi has come to Sarona from Café Hampstead, but has left his culinary footprints in many corners of the world. Lavi trained in classical French cuisine before working in Mexico for two years and on his return to Tel Aviv, he worked under Rafi Cohen at Raphael before a highly inspirational stint with chef Raz Rahav at the city’s famous OCD restaurant.
Rahav was recently chosen by the French guide, Gault & Millau, as chef of the year 2018. Lavi’s culinary concept is deeply intertwined with his Middle Eastern heritage, enhanced by his travels and experiences.
Often considered a borderless cuisine, Aviv Lavi has interpreted thousands of years of Middle Eastern food and presented it in a distinctly modern way. Lavi’s new produce-led menu is influenced by the culinary techniques and ingredients from a myriad of countries spanning Greece, Turkey, Israel, Morocco, Iran, Iraq, Palestine, and beyond.
Focusing on simple seasonality, Lavi has ensured that every ingredient on the menu serves a purpose and the simple yet thoughtful combination of flavours reflects the diverse heritage of the countries that he’s been inspired by.
Sarona’s Summer menu is ideally shared and features raw and vibrant vegetable salads, complemented by grilled, fried and charred plates.
Highlights from the menu include:
Palestinian cheese, organic tomatoes & balsamic - £10
Fried sabanech, creamy labneh, pine nuts - £6
Charred chicken pargit, labneh, tomato seeds - £14
Seabass, cherry tomatoes, Kalamata olives & basil - £16
