Thai Prawn Spring Rolls with Fresh Chilli Jam

Fresh, vibrant and packed with flavour, these Thai-inspired prawn spring rolls are surprisingly simple to make and ideal as a light lunch, starter or sharing platter. The Fresh Chilli Jam adds a gentle chilli kick and fruity sweetness that perfectly complements the fresh herbs, succulent prawns and crunchy vegetables. Prepare them up to three hours in advance and keep chilled until ready to serve, or lightly fry for an irresistibly crisp finish.

Ingredients

Spring Rolls

  • 10 rice paper wrappers 
  • 100g cooked king prawns, roughly chopped 
  • 1 tbsp light soy sauce 
  • 1 handful Thai basil leaves, torn 
  • 1 handful fresh coriander, torn 
  • 2 sprigs fresh mint, leaves roughly torn 
  • ½ iceberg lettuce, finely shredded 
  • 1 carrot, julienned 

Fresh Chilli Jam and Peanut Sauce

  • 2 tbsp Tracklements Fresh Chilli Jam 
  • 2 tbsp crushed roasted peanuts 
  • 1 tsp warm water (or a squeeze of lime juice) to loosen, if required 

To Serve

  • Extra Tracklements Fresh Chilli Jam for dipping 

Method

  1. Toss the chopped prawns with the soy sauce and set aside. 
  2. Mix together the Tracklements Fresh Chilli Jam and crushed peanuts.  Add a splash of warm water or lime juice if you prefer a looser consistency. 
  3. Arrange the herbs and vegetables ready to assemble. 
  4. Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for 10–15 seconds, then transfer to a clean board.  It will continue to soften as you work. 
  5. Layer a little lettuce, carrot, herbs and prawns, topped with the sauce, across the lower third of the wrapper. Fold the sides in, then roll up tightly. 
  6. Repeat with the remaining wrappers. 
  7. Serve immediately, or chill for up to three hours.  For a crispy alternative, lightly fry the rolls in groundnut or sesame oil for 2–3 minutes on each side until golden, then serve warm with the extra Tracklements Fresh Chilli Jam. 

Barbecued Prawns with Fresh Chilli Jam

 Sweet, smoky and packed with vibrant flavour, these barbecued prawn skewers are guaranteed to impress with very little effort. Fresh Chilli Jam creates a beautifully balanced marinade, combining fruity sweetness with a gentle chilli heat that caramelises as the prawns cook, delivering sticky, lightly charred prawns bursting with flavour. Perfect for barbecues, alfresco lunches or as an easy starter, they’re ready in minutes and are delicious served with an extra spoonful of Fresh Chilli Jam for dipping.

Ingredients

  • 3 tbsp Tracklements Fresh Chilli Jam
  • 1 garlic clove, crushed
  • Juice of 2 limes
  • ¼ tsp freshly ground black pepper
  • 400g raw king prawns, peeled
  • Handful of fresh coriander, finely chopped
  • 10-12 skewers (soaked if wooden)

To Serve

  • Dressed green salad
  • Lime wedges
  • Extra Tracklements Fresh Chilli Jam for dipping

Method

  1. In a bowl, mix together the Tracklements Fresh Chilli Jam, garlic, lime juice and black pepper. Add the prawns and toss well until evenly coated. Cover and marinate in the fridge for 20 minutes.
  2. Thread 4-5 prawns onto each skewer. Barbecue over a medium-high heat, or cook under a preheated hot grill, for 3-4 minutes on each side, basting occasionally with any remaining marinade, until the prawns are pink, lightly charred and cooked through.
  3. Arrange the skewers on a serving platter, scatter over the chopped coriander and serve immediately with a dressed green salad, lime wedges and an extra pot of Tracklements Fresh Chilli Jam for dipping.

Buddha Bowl with Fresh Chilli Jam

Fresh, colourful and packed with goodness, this vibrant Buddha Bowl is as satisfying as it is nutritious. Ingredients

  • 150g quinoa (or your favourite grain, such as brown rice or bulgur wheat)
  • 1 ripe avocado, sliced
  • ½ red pepper, thinly sliced
  • 1 carrot, peeled into ribbons
  • 100g red cabbage, finely shredded
  • ½ cucumber, diced
  • 100g edamame beans, fresh or frozen and thawed
  • 2 tbsp Tracklements Fresh Chilli Jam
  • 1 tbsp light soy sauce
  • Juice of ½ lime
  • 1 tbsp sesame seeds

Method

  1. Cook the quinoa according to the packet instructions, then divide between two serving bowls.
  2. Arrange the avocado, red pepper, carrot ribbons, red cabbage, cucumber and edamame beans over the quinoa.
  3. Mix the Tracklements Fresh Chilli Jam with the soy sauce and lime juice to create a simple dressing, then drizzle generously over the bowls.
  4. Finish with a scattering of sesame seeds and serve immediately.
