A new range of 32cm wood-fired sourdough pizzas, hand-crafted in Italy and slow-proved for 24 hours.

Each pizza in the collection celebrates Italy’s most iconic regions, all built on a Romana base – thin and crisp with a golden, leopard-spotted cornicione. Every recipe tells a story of place, produce and tradition.

To elevate the experience, Crosta Mollica has curated a wine pairing for every pizza, marrying regional flavours with Italian varietals for a perfect pairing perfetto.

At a launch event at the Serpentine Gallery, we tasted the pairings which were indeed perfetto and the new pizzad are excellent, the best we’ve ever had from a supermarket..

THE COLLECTION

PORTOFINO

Inspired by the iconic coastal town of Portofino, known for its pastel-hued houses and fresh, colourful cuisine, this is our refined take on the Margherita classica. Elegant yet characterful, it brings together slow-roasted pomodorini gialli and delicate mozzarella di bufala – because the finest ingredients speak for themselves. A final drizzle of vibrant basil salsa captures the taste of summer on the Italian Riviera.

Pairing Perfetto: Crisp and citrusy Vermentino has noteminerali to cut through the creamy mozzarella, pairing beautifully with the acidity of the pomodorini.

BOLZANO

Inspired by the picturesque city of Bolzano, known as the gateway to the Dolomites, our pizza of the same name draws on the hearty, bold flavours of traditional Alpine cooking. Featuring rich salsiccia sausage, sweet-savoury balsamic red onions and fragrant rosemary, this is a celebration of the region’s cooler climate and spirito di montagna.

Pairing Perfetto: A fruity Montepulciano, served slightly chilled, will match the richness of the salsiccia without overwhelming it, while the acidic, peppery accents complement the pomodoro beautifully.

BOSCO DI ALBA

Inspired by the ancient woodlands of Alba (Bosco di Alba in Italian), our rustic yet indulgent pizza is a tribute to the truffles that flourish in the Piedmont region of Northerm Italy. Pairing fragrant summer truffles with funghi alla griglia and a velvety roasted garlic crema, this recipe celebrates the rich, earthy flavours that have shaped pietmontese cooking traditions. 

Pairing Perfetto: Barbera, produced in Piedmont, has an earthy, cherry profilo to counter the rich funghi, and aromatic hints that echo the black pepper finish.
