From William Tullberg’s first mustard in the 1970s to the new, limited-edition Tracklements Wholegrain Figgy Mustard, Tracklements has built a reputation for award-winning, tasty and versatile kitchen cupboard staples.

The latest addition to the Tracklements selection, Wholegrain Figgy Mustard, is £4.20 for 190g on the Tracklements website. It is a seasonal take on a classic, ideal for bringing winter-warmer flavours and some seasonal spice into the kitchen.

Wholegrain mustard is known for its punchy flavour: mustard seeds soaked in vinegar deliver an earthy, piquant and rather robust flavour profile that adds a little something special, whether it is spread in a ham sandwich, used in a hearty salad dressing or stirred into a sauce.

The sweetness of figs and the warm spices, such as cloves, allspice peppercorns and cinnamon, do not detract from the classic flavour profile; they enhance it. The result retains what we know and love about wholegrain mustard while adding fruitiness and richness.

When added to a base of mixed grains, silken tofu and chickpeas (amongst other things) to make a mushroom, autumnal dish, the Wholegrain Figgy Mustard added roundness and a gentle but building heat. It was a great addition to something earthy and warming, adding an additional layer that otherwise would have been missing.

We also tried it stirred through a base of butter beans with a little garlic and lemon juice for freshness, topped with roasted vegetables such as sweetheart cabbage and Romano pepper — though it would work equally well with lamb.

The slightly charred flavours married well with the earthy, fruity hit from the mustard, while the seeds
added a delightful pop of texture.

The website says it would elevate ‘thick, hand-carved roast ham, pork pies and doorstop turkey and stuffing sandwiches’. And it probably would. I can definitely imagine it adorning a burger to add some zing, for example.

And if you’re willing to cook with it too, as an alternative to regular wholegrain mustard, this is definitely a
treat to keep on hand.
