Trine is a leading figure in Danish food culture and well known to UK audiences through her appearances on the Great British Bake Off and Saturday Kitchen.

A long-time fan of Ole & Steen, Trine brings her deep knowledge of Scandinavian cuisine and her passion for sustainability to this brand-new range. The Danish chef and author is known for her love for food that’s rooted in place, seasonality, and tradition.
She has just launched her new book called Eat Copenhagen and a selection of these recipes will exclusively be shared with Ole & Steen guests.
Launching today, Tuesday 17th June, the Open Rye menu replaces the current selection and offers a new, elevated taste of Denmark, combining high-quality ingredients, seasonal flavours and Ole & Steen’s signature carrot rye base.
Each sandwich is hand-crafted and packed with vibrant toppings – from smoked fish and creamy herbs to bright vegetables and Scandi-inspired salads.
The new range features Carrot Rye topped with fresh ingredients including smoked salmon, herb and lemon cream cheese, fennel, fresh dill and micro herbs. There’s roast beef, horseradish mayonnaise, spinach, pickled red onions, cucumber and micro herbs. As well as green pea, herb and chicken salad, fresh asparagus and micro herbs. To finish the Carrot Rye topped range there’s smashed avocado and peas, jammy egg, mixed seeds and pea shoots.
The new range is now available at all Ole & Steen bakeries.
