Coming to us from the heart of Catalonia, D.O. Cava is Spain’s only Designation of Origin dedicated exclusively to traditional method sparkling wines.

With a history spanning more than 150 years, every bottle is produced using the same technique as the world’s most renowned sparkling wines (you know who we mean). That is to say secondary fermentation in the bottle, followed by extended ageing on the lees. This time-honoured process creates fine, persistent bubbles, remarkable complexity, and a refined profile with delicate toasted brioche notes balanced by freshness.

But of course Cava comes from a very different terroir to the French stuff. A Mediterranean climate and indigenous grape varieties with warm, sunny days and cooling coastal breezes allow the grapes to reach optimal ripeness while retaining their naturally bright acidity. This balance enables many Cavas to be produced as Brut Nature, with no added sugar, offering a pure and authentic expression of both fruit and place.

Cava’s distinctive character is further defined by its native grape varieties – Xarel·lo, Macabeo and Parellada – which bring structure, freshness and unmistakable personality, setting Cava apart from any other sparkling wine in the world.

All D.O. Cava wines in the Cava de Guarda Superior category, or above, are produced using 100% organically grown grapes. Every bottle is also fully traceable to the vineyard where the grapes were grown, providing transparency, authenticity and sense of provenance.
