In 2007, childhood friends Jan Helskens and Wim De Veirman launched GreenPan in Belgium, making it one of the first brands to introduce PFAS-free ceramic non-stick coatings for cookware.
The brand has continued to evolve its ranges, with the new GreenPan Apex Collection representing its latest development.

For a long time, I opted for non-stick pans because they were durable and easy to use. When I was living in rented flats, I never knew whether my next hob would be gas, electric or induction, so versatility mattered too. Generally, I chose the best-performing cookware I could afford
The fact that GreenPans are engineered with Thermobond™ technology — a distinctive raised, etched stainless-steel pattern — was a definite positive for me. It meant I wouldn’t have to worry about food sticking stubbornly to the pan and becoming difficult to remove. I know there are tricks for dealing with food and non-stick cookware, but on an average day and 80% of the time I’m in a rush and impatient.
The Thermolon™ PFAS-free ceramic non-stick coating, combined with the 3-ply stainless-steel base, gives the collection the durability needed for everyday use. The cookware is free from PFAS, PFOA, lead and cadmium. It is also safe to use with metal utensils, which makes it especially practical if you tend not to be too choosy about whichever utensil comes to hand.
I first used the 28cm GreenPan Apex Fry Pan to make a beany base for a roasted vegetable dish. It heated the ingredients evenly and, importantly, nothing stuck to the bottom when it was time to serve. Equally, the pan was also quick and easy to clean, with any remaining residue lifting away without a scrubbing marathon. I chose to wash mine by hand, although the collection is dishwasher-safe for added convenience.
I also tried the pan with roasted vegetables and found its hob-to-oven capability particularly useful, thanks to the metal handle (it saves having to use another dish). I could start the dish on the hob, brown the ingredients and then finish everything in the oven. That flexibility would be helpful for any multi-stage recipes such as frittatas, braised meat – the GreenPan Apex lidded skillet would be especially well suited to this – macaroni cheese or even baking a tarte tatin.
I would feel confident using the Apex Collection for flipping, searing or browning. GreenPan says that every piece in the new collection is designed to combine professional-level performance with contemporary aesthetics; based on my experience with the 28cm Fry Pan, I’m inclined to agree.
