Tracklements has just introduced two new flavoured mayonnaise – Sriracha Chilli and Indulgent Garlic.

I do love Mayo, so much so that I make my own. People though will tell you that the slow adding of oil is difficult and the mayo will split on you faster than a hippy who finds meat in your fridge. Not cool maan.

Ah but I use the KitchenAid Cordless Food Chopper, reviewed here. It has a special attachment, and an oil dispensing lid, that makes it all but impossible to fail. I never have yet, it’s a wonder.

That said, there’s nothing much wrong with a quality jar mayo either and these two new ones from Tracklement had me parking my own mayo for a while.

The new Sriracha Chilli Mayonnaise is made with fermented red chillies and garlic. A smooth, velvety mayo base is texturally satisfying while the heat of Millenial Ketchup (aka Sriracha)is not vicious but more of a wam embrace.

The ‘Indulgent Garlic Mayonnaise is equally rich and smooth. I have tried putting garlic into my own mayo but it’s never really worked, the garlic has been overpowering. Tracklements have kept the garlic flavour but removed the rawness.

They’re both excellent in coleslaw, bacon sandwiches, salads or, if you’re me, eaten with a spoon out of the fridge when your partner isn’t looking.

Use as a dip for sweet potato fries, crispy calamari, tempura veg or chicken wings. Swirl through mashed avocado for a spicy guac.
