Butlers Farmhouse, near Preston in Lancashire, recently held a competition for recipes using cheeses they make for Asda. If you’ve had enough of turkey leftovers, these prize-winning recipes (a warm soufflé, a cooling pear salad, and spicy sausage balls) will lift and refresh your palate.


Lancashire and Parmesan Chive Souffle

Serves 3 (can be doubled)

25g butter

15g plain flour

150ml milk

3 eggs, separated

75g Asda Extra Special Creamy Lancashire cheese, grated

25g Parmesan, grated

Pinch of salt and pepper

1 tsp chives

Salad leaves

A few small tomatoes

Three ramekin dishes, buttered

  1. Heat the oven to 190C/375F
  2. Melt the butter gently in a saucepan
  3. Stir in flour and cook for one minute
  4. Gradually add the milk, stirring continuously until it has thickened
  5. Remove from the heat and allow to cool for a couple of minutes
  6. Stir in the egg yolks, salt, pepper, chives and the grated cheeses
  7. Whisk the egg whites until stiff and fold them gently into the cheese mixture
  8. Spoon into the buttered ramekin dishes
  9. Bake in the centre of the oven for about 20 minutes until golden and risen

Lancashire and Pear salad

Serves 4

4 pears

150g Asda Extra Special Creamy Lancashire

3 tsp clear honey

80g walnuts, shelled

  1. Quarter the pears, remove the cores and peel
  2. Slice the quarters lengthways into 5mm slices
  3. Slice the cheese lengthways, matching the shape of the pears
  4. Arrange the pear and cheese slices on individual plates
  5. Drizzle with the honey and sprinkle with the walnuts

Spicy cheesy sausage balls

Serves 4 to 8; also good for canapes

1 pack of sausage meat

150g Asda Extra Special Creamy Lancashire cheese

1 red chilli, finely chopped

Pinch of salt

150g self raising flour

Grated zest of one lime

2 tbsp sweet chilli sauce

Salad leaves

  1. Mix together the meat, chilli, salt, zest and sauce (best done by hand)
  2. Add the cheese and mix again
  3. Add the flour and mix a third time
  4. Form into small balls and chill in the fridge for an hour
  5. Bake in the oven, at a moderate heat, for 30-40 minutes
  6. Serve with a salad and more chilli sauce as a dip
