The autumnal olive harvest has just begun in Italy and to celebrate the wholesome Mediterranean diet here’s a delicious recipes from our friends at To Tuscany inspired by the land that produces some of the most exquisite olive oil in the world.
From hearty stews to home-baked breads, there are always dishes that are guaranteed to transport you to the rolling hills and golden sunsets of Italy
400 g soaked salt cod
oil for frying
200 g cherry tomatoes or tinned tomatoes
extra virgin olive oil
Remove the bones from the salt cod with tweezers, then cut into pieces.
Flour the pieces of fish and fry well on both sides. Then remove any excess oil using kitchen paper.
Cook the cherry tomatoes in a pan with the oil, cloves of garlic and pepper.
When the sauce has thickened, gently place the salt cod in the pan.
Leave to cook for about twenty minutes, the time required to cook the tomatoes.
Remove the cloves of garlic and serve with some chopped parsley.
