Spiced sweet potato and butternut squash soup

Serves 4

Ingredients:
1 tbsp olive oil
1 medium onion – peeled and diced
2 cubes Dorot Crushed Garlic
2 cubes of Dorot Chopped Coriander
15mlsp (1 tsp) ground cumin
300g (11oz) sweet potato – peeled weight and diced
250g (9 oz) butternut squash – peeled weight and diced
Seasoning
1 litre (1 ¾ pts) vegetable stock

Method:
• Heat oil in large saucepan, add onion, and Dorot Crushed Garlic, cook until soft
• add ground cumin and cook a further minute
• Add sweet potato and butternut squash, stir and cook for five minutes
• Add seasoning and stock, bring to the boil and reduce to a simmer for 20 minutes or until the sweet potato is cooked
• Blend or process vegetable mixture until smooth
• Stir in the Dorot Chopped Coriander
• Return to heat and bring back to the boil
• Serve hot with crusty bread, optional – add a spoon full of cream just before serving

Asian Stir Fried Beef with Cherry Tomatoes

Ingredients
300g Beef Sirloin (cut into strips)
200g Rice Noodles
5 Tbsp Sunflower or Corn Oil
1 Dorot Crushed Ginger Cube
1 Dorot Crushed Garlic Cube
1 Dorot Chopped Coriander Cubes
1 Tbsp Honey
4 Tsp Pistachios (finely chopped)
8 Cherry Tomatoes (halved)
10 Champignon Mushrooms (quartered)
½ Cup Spring Onions (finely chopped)
Salt & Pepper
Method
• Cook the noodles in a pan with hot water and a little salt, according to the manufacturer’s instructions
• Add the oil to a large wok and stir fry the strips of beef on a high heat
• Add the cherry tomatoes and mushroom and mix thoroughly
• Add the prepared rice noodles, the honey and all the Dorot cubes
• Season with salt & pepper and add the spring onions & pistachios
• Mix well and serve
