  • ‘Baptism of Fire’, a rum based cocktail using Zacapa 23-year-old rum combined with a banana & chilli shrub, guava and lime juice, port, cedar essence and angostura bitters. This fruity long drink, served with a dried lime and banana leaf pays homage to Churchill’s first experience with the Cuban military.

  • ‘Guantanamera’, inspired by the famous Cuban song features avocado infused Tanqueray No.Ten, resulting in a smooth and creamy taste. Cocchi Americano, cucumber sherbet, banana syrup, a squeeze of lime and a black cardamom tincture, all made in house.

  • ‘Las Terrazas’ is dedicated to the Cuban eco-village’Las Terrazas’ which was built by industrious workers and is still there fifty years later. This eye-popping cocktail uses a red cabbage wine sherbet which gives it a unique and earthy flavour.

Cuban classics on the menu include:

  • ‘Evolution of the Daiquiri’, a creative trio which takes guests through a journey of the biggest cocktails to emerge from Cuba, the Daiquiri.
