Gourmet French mustard brand, La Maison Maille, has created the world’s first mustard macaron with French D&D London restaurant, Coq d’Argent.

Coq d’Argent’s head chef, Damien Rigollet, has experimented with flavour to take a unique twist on macarons. The sweet treat features savoury Maille mustard as a key ingredient and is set to tantalise the taste buds of the city’s dessert lovers.

The partnership is a continuation of Fête de la Gastronomie, which ran from 18 to 31 July, and saw London’s finest restaurants and food producers use Maille products as key ingredients to enhance a variety of sweet and savoury dishes. The festival featured Bruno Loubet’s Grain Store, choux pastry specialist Maître Choux, award-winnning Galvin Bistrot de Luxe and urban cheese maker Wildes Cheese.

Damien Rigollet, said: “At Coq d’Argent, we’re always keen to try new ingredients in our recipes to create the inventive twists on classic dishes. The Maille Honey mustard is not only a delicious addition to our classic macaron, but it’s a completely unique French treat that has never been created before.

“As a similar premium French brand, we’re delighted to partner with Maille to continue its celebration of London’s food and hope to continue creating further sweet and savoury dishes using its delicious range of products.”

Harry Lalousis, global brand ambassador at Maille, commented: “Fête de la Gastronomie was a huge success and saw Maille mustard being used in a variety of dishes – from ricotta-stuffed courgette flowers to strawberry, basil and mascarpone éclairs.

“We’re delighted to team up with Coq d’Argent to create an exclusive French treat bursting with flavour. We’re really excited for our customers to try the macarons and learn all about the art of patisserie from the experts.”

The macarons will be on sale from 13 September onwards at Coq d’Argent. They will also be available to purchase from the Maille Boutique at £5.50 for a box of two.
