Cuisson has brought its Michelin-­Ã¢â‚¬Âtrained chefs and innovative cooking techniques to Borough Market for the newest POPdown, an Asian inspired interactive pop-­Ã¢â‚¬Âup restaurant and dining experience running until January 2017.

Taking over two floors on the corner of Cathedral Street, overlooking the food market, Cuisson’s POPdown will feature three rooms of culinary theatre. From Japanese small plates and cocktails and snacks to a 5-­Ã¢â‚¬Âcourse tasting menu and multi-­Ã¢â‚¬Â sensory video menu.

Located on the ground floor of the venue is Cuisson’s  Ikigai bar, which lives and breathes by the Japanese philosophy “a reason for being.” Craft beers and wines as well as bespoke cocktails designed by Cuisson’s head bartender will be available alongside inventive small dishes and bar snacks, which aim to showcase and highlight the very best of Borough Market.

Bar snacks start from £5 and examples include:

  • Korean vegetable pancake
  • Oysters tempura, oyster with cucumber XO sauce
  • Beef Sashimi, lime and chili dressing, peanuts and coriander

Also on offer is the ‘Immersive and Gunn’ video experience, held downstairs at the Ikigai bar. Each participant is requested to bring along a smart phone with web access and earphones in order to take part. They are served two glasses of beer and a Google glasses headset, which transforms the senses and completely alters the perception of flavour notes.

In addition to this, guests can enjoy two beers and the video experience with two matched dishes, such as a lime and chili squid dish coupled with a lager and a Pork belly and nashi pear dish matched with an Oak-­Ã¢â‚¬Âaged beer.

Those looking for  the full  Cuisson experience can enjoy an Asian style  seasonal 5  course-­Ã¢â‚¬Âtasting menu, inspired by the market traders and their produce.

To  complement  the  dining  experience, guests can take their pick from a list of carefully selected wines and cocktails. For those looking for a more intimate setting, a private dining room is available for hire for up to 20 guests.

The 5-­Ã¢â‚¬Âcourse menu is priced at £45 and examples from the menu include:

  • Prawn wanton, chilli jam, lava salt
  • Sea bream, yuzu, wasabi puree
  • Ginger and soy marinated grilled pork loin, pickled cucumber, bean sprouts, daikon and rice

Cuisson will also be organising exclusive events, such as an oyster cooking masterclass or an Asian beer tasting evening. Jointly hosted with market traders, guests will have the opportunity to learn about ingredients directly from producers and hone culinary skills  with the  help  from  Cuisson’s chefs.
