On Saturday 3rd June to mark London Food Month, Stevie Parle’s Craft London will host a smoking and curing workshop led by their master smoker Chris Box.

Using Craft London’s traditional wooden draft smokehouse, participants will have the chance to smoke meats and seafood for themselves, learn how to build a simple smoker to be replicated at home, and prepare a delicious lunch to enjoy that day.

Participants will start the morning with an introductory coffee at Craft London’s café and then head across the kitchen gardens to Craft London’s on-site smokehouse, where they will be treated by Chris to a mini spectacle of hot and cold smoking in action.

Chris will lead a hands-on workshop showing how to prepare and cure fish while discussing the process of smoking other produce such as vegetables, vinegars, butters and creams.

Participants will also be shown how to make a small smoker that can easily be replicated at home, and make snacks from an assortment of different items smoked that day. To round off the workshop, everyone will use the hot smoker to prepare part of a lunch to be served in the Craft London restaurant.

The three-course meal enjoyed by all will include a seasonal cocktail and feature hot smoked salmon with kale, white cabbage & apple; 50 day-aged pork shoulder with wild garlic & asparagus; and black currant leaf ice cream with milk foam & meringue.

Priced at £100 per person, the smoking and curing workshop at Craft London on 3rd June includes the workshop, lunch and the opportunity to take home the day’s cured produce.
