Karam Sethi will take over as head chef of Trishna, London on St. Valentine’s day. With previous experience at Bukhara in Delhi (a regular of the San Pellegrino World 50 Best Restaurants), Trishna Mumbai and Zuma London, he will bring a modern take on traditional coastal classics. Dishes include: Aylesbury duck seekh kebab with green chilli, shallots and pineapple chutney, Hariyali bream with mint, coriander and tomato kachumber and Guinea fowl tikka with fennel seed, star anise and masoor lentils.

Invigorated following a two month trip to India, Karam told Foodepedia: ‘I am looking forward to the challenge of cooking with British ingredients.’

The 60 cover Marylebone staple was brought to life by designer, B3 (Le Gavroche and Roka) and features exposed brick walls and tumbled marble. In warmer weather, the restaurant’s doors open onto Blandford Street. Using the venue’s cellar as backdrop, the private dining room seats up to a dozen.
