Apple and cinnamon pancakes

The basics: Takes less than 15 mins to make. Makes about 12 pancakes

What you’ll need:

  • 1 mug (approx 200g) of plain flour
  • 1 mug (approx 200ml) of milk
  • 1 egg
  • 1/2 teaspoon of baking powder
  • 2 tablespoons of olive oil
  • 1 crispy green apple – peeled and grated
  • 1 heaped teaspoon of cinnamon
  • Pinch of salt

Method:

  1. Sift the flour, baking powder and cinnamon into a bowl
  2. Whisk the milk, egg and oil together and add the grated apple
  3. Whisk the wet mixture into the dry ingredients until the batter comes together and is lump free
  4. Heat a non stick frying pan with a drizzle of oil and small knob of butter. Place tablespoons of the mixture into the pan (3 pancakes if it’s a large frying pan)
  5. When bubbles appear on the surface of the pancakes flip them over and cook for another 30 seconds or until golden on both sides.
  6. The icing on the cake: Serve the warm pancakes with a drizzle of honey and a dollop of Greek yoghurt
