Have you tried Hearts of Palm yet? It comes from the core of a palm tree in South America and is popular in French salads. Here in the UK, they come in cans made by Green Giant and are available in leading supermarkets nationwide. To give you some ideas about how to use this unusual ingredient, Green Giant have created some salad recipes.

Tangy Feta Salad

Serves 4

Ingredients:

1 can Green Giant™ Hearts of Palm
½ Romaine lettuce, shredded
1 pack Feta cheese, cubed
16 baby plum tomatoes, halved
Approximately one third of a cucumber, diced
Few black olives
Balsamic dressing

Method :

  1. Tip the Hearts of Palm into a sieve and rinse under cold water and drain, slice into discs
  2. Toss together the lettuce, Hearts of Palm, tomatoes, cucumber and feta cheese.
  3. Place in a serving bowl, scatter over the olives and drizzle with balsamic salad dressing, toss lightly and serve immediately (chunks of warm, crusty bread to soak up all the juices are optional!)

Fruit and Spicy Salad

Serves 4

Ingredients:

1 can Green Giant™ Hearts of Palm
7 – 8 medium tomatoes, sliced
1 red onion, skinned, halved and thinly sliced
2 medium or 1 large ripe mango, peeled and cut into slices
2 tsp. chilli flakes or crushed chillies
Small bunch fresh coriander, roughly chopped
Honey and Mustard salad dressing (1 tsp. wholegrain mustard, 2-3 tsp runny honey, 100ml olive oil, 30ml wine or balsamic vinegar, salt and pepper)

Method:

  1. Tip the Hearts of Palm into a sieve and rinse under cold water and drain then slice at an angle (to create elongated discs)
    arrange the mango and tomato slices on a serving plate and then evenly scatter the onion and chilli
  2. If making your own dressing whisk together al the ingredients, drizzle over the salad and finally top with the chopped coriander
