Proper Salad Nicoise

Serves 2

INGREDIENTS
100g/4oz fine green beans
2x large tomatoes, sliced
Fresh chives, snipped
2x large Happy Eggs
2x 100g/4oz fresh tuna steaks
1oz/ 25g capers
2oz/ 50g black olives
Vinaigrette Salad dressing

METHOD
Cook the beans, then drain and cool
Place the Happy Eggs in a small pan of boiling water, bring slowly to the boil , cook for 3 minutes, drain, rinse under cold water , and remove shell
In the meantime griddle the fresh tuna steaks
To serve place the tuna on a bed of sliced tomato and green beans
Sprinkle over the capers, black olives and the chives
Spoon over the vinaigrette dressing
Then top the tuna with the lightly poached egg

Tuscany Eggs

Serves 4

INGREDIENTS
4x large Happy Eggs
4x medium red onions
3x tablespoons olive oil
3x small dried red chillies
1x tablespoon red wine or sherry vinegar
1x teaspoon sugar
1x glass red wine
Fresh sage leaves or ½ teaspoon dried sage
Salt and black pepper to taste

METHOD
Peel and slice the red onions
In a heavy based frying pan add the olive oil
Fry the onions and the chillies in the oil for about 15 minutes, stirring all the time, till they are tender
Add the sage, season well and the vinegar, sugar and red wine
Cook till the mixture is thick and moist
Break the eggs and add to the mixture
Gently cook till they are set and soft
Serve with crusty bread

Blueberry and Marmalade Pancakes

Serves 4

INGREDIENTS
150g/5oz plain flour
2x large Happy Eggs
2x tablespoons marmalade, either orange/grapefruit or lime
125ml cold milk
225g/8oz fresh blueberries
Oil to fry

For the Sauce –
3x tablespoons marmalade, let down with some orange juice or brandy

METHOD
In a food processor, add the Happy Eggs, flour, milk and the 2x tablespoons marmalade
Blitz to a smooth batter, then add the fresh blueberries
In a small non stick frying pan add a little oil, add some of the batter, making sure that each pancake has some berries in them
Continue to cook the pancakes till all the batter is used
Keep them warm in the oven in the meantime
Warm up the remaining marmalade with a little orange juice or brandy in a saucepan, and serve drizzled over the pancakes
