She put up with a cake-batter smeared child ‘helping’ with the baking on many a rainy afternoon, so repay your Mum this Mother’s Day with a batch of rather superior cupcakes. And, if you really love her, you could even let her lick the bowl.

Nielsen-Massey Rose Water Cupcakes

Ingredients:

For the rose water syrup:

For the cupcakes:

  • 200g unsalted butter, softened
  • 200g golden caster sugar
  • 1 tsp Nielsen-Massey Rose Water
  • 4 medium eggs, lightly beaten
  • 200g self-raising flour
  • prepared rose water syrup

For the rosewater buttercream:

  • 200g full-fat cream cheese
  • 100g unsalted butter, softened
  • 600g golden icing sugar
  • 1 tsp Nielsen-Massey Rose Water
  • pink food colouring paste (optional) 

Method:

For the rose water syrup:

  • Place the sugar and water in a pan and simmer for a few minutes until dissolved.
  • Remove from heat and set aside to cool, then stir in the Nielsen-Massey Rose Water.

For the cupcakes:

  • Preheat the oven to 180C/fan 160C/gas mark 4, and line a muffin tin with cupcake cases.
  • In an electric mixer or with a mixing bowl and whisk, beat the butter and golden caster sugar together until pale and fluffy.
  • Whisk in the Nielsen-Massey Rose Water, then reduce the whisk speed and slowly add the eggs along with a tablespoon of flour to prevent curdling.
  • Once combined, add the remaining flour and mix in thoroughly. Do not overbeat.
  • Using either a piping bag or ice-cream scoop, divide the batter between the cupcake cases.
  • Bake for 20 minutes, or until lightly golden and firm to the touch. 
  • Leave to cool a little on a wire rack then pour some rose water syrup over the top of each one.
  • Once completely cooled, remove from the tins. 

For the frosting:

  • Mix cream cheese, butter, Nielsen-Massey Rose Water and icing sugar together until light and fluffy. 
  • If using, add a few drops of pink colouring until you reach the desired shade. 
  • Fill a piping bag with the buttercream and ice accordingly.
