Gin Mare (pronounced mar-ray) is a combination of ingredients crafted to capture the essence of an epicure’s Mediterranean. This premium gin can be served as an apéritif on a warm summer’s evening with friends, or enjoyed as a refreshing cocktail high above the city in the capital’s trendiest roof top bars.
The pinnacle of this unique gin lies in the four principle botanicals; the arbequina olive from Spain, thyme from Greece, basil from Italy and rosemary sourced from Turkey. Each botanical is steeped during a period of more than twenty-four hours and then individually distilled to create a versatile full-bodied gin with notes of juniper, balanced with aromas of tomato plants and olives.

Ingredients:
- 50ml Gin Mare
- 25ml Lillet Blanc
- 0.5ml salt solution*
- 1 small whole strawberry
Method
Add all ingredients to a metal mixing tin filled with ice. Stir for between 20-30 seconds, until the drink is chilled and diluted appropriately. Taste using a straw, until ready and strain into a chilled, stemmed or coupe cocktail glass.

Half a strawberry on cocktail stick
*Salt solution
20g Sea salt, dissolved in 100ml water
