After the success of their classes at Meatopia 2015, Turner & George are to begin running pork, beef and lamb Butchery Classes after hours at their shop in Clerkenwell every Wednesday and Saturday.

Led by their own butcher, the classes are a chance to go behind the scenes at the shop, learn some traditional butchery skills to try at home, and of course – take away a whole load of meat butchered on site.

Each class, be it lamb, pork or beef, will feature the very same ethically sourced, rare and native breed meats seen at Turner & George’s two London sites and on their website. The 90 minute classes are designed with budding cooks or butchers in mind; the breeds will differ week to week depending on the cuts that have been appropriately aged, or simply by what their farmer thinks is best, so no class is the same as the next.

 Starting off with a short intro into provenance and farming techniques along with a drink, is the chance to ask any questions about the meat industry. The butcher will get the students kitted out with chainmail gloves, steak knives and handsaws before showing a full carcass breakdown in detail.

Then, it’s on to the fun part, as he or she demonstrates step by step how to turn the chosen primal cut into chops, steaks, slow cooking cuts and feasting joints. The end result is a huge load of meat to take home, as well as a Turner & George goodie bag to help make the most of your meat.
