Absurd Bird is a new Southern US inspired gourmet chicken brand launching in Spitalfields at the end of February and in Soho shortly after with a  brand philosophy that is, apparently, to celebrate difference by celebrating the absurd.

Absurd Bird has partnered with Fosse Meadows Farm, a traditional free range chicken farmer often to be found at the chic-er North London markets The birds are fed food additive and hormone free and grown byan old fashioned farming technique using only slow growing breeds Cotswold White and Cotswold Gold, which are reared for 20% longer than leading organic birds and 50% longer than your average free range variety.

Playing to the Southern roots of warmth and hospitality, the décor, music and overall ambience of each location are synchronised with the style of food and the local environs. They will feature an almost underground bar and with a nod to the’Deep South’ states of the US, a wing shack – dedicated to smoking the very best wings. The Southern inspired drinks menu has been created in association with Soul Shakers.

The menu will have whole spatch-cocked smoked chicken which is hot smoked in house plus crispy, fried chicken on a waffle – marinated overnight in buttermilk. Plus  Ã¢â‚¬Å“jalapeno cheese biscuits”, “hurricane popcorn”, “corn bread pudding” or “sweet potato marshmallow bake”

Absurd Bird is also a firm supporter of an anti-bullying charity, fighting child bullying.Which sounds a bit odd, but we know what they mean
