On Tuesday 24th March, Kanishka will host an exclusive Four Hands dinner bringing together chef patron Atul Kochhar and Aji Akokomi, the acclaimed founder of Michelin starred Akoko.

Akoko has redefined how West African cuisine is experienced on the fine dining stage. Akokomi’s cooking draws on deep rooted regional traditions, elevated through over the fire cooking, bringing bold spice and layered umami to the table.

For this one night only collaboration, Akokomi will join Atul Kochhar to create a bespoke tasting menu that will place Kanishka’s innovative pan Indian approach alongside Akoko’s expressive West African flavours. The menu will open with refined snacks such as waina with tamarind jamchicken liver and N25 caviar, followed by monkfish with egusi and okra, and BBQ prawn with moimoi.

Mains will include wild garlic cornfed chicken with coconut and truffle, and lamb rump with lamb shammi, asparagus, watercress and jus.

To round off the meal, dessert will feature Tellicherry black pepper and blackberry sorbet, finishing with sorghum ice cream, popped sorghum and plum.
