All-day dining restaurant Florentine collaborates with a community of honey bees to create a menu of honey-based specials.

The all-day-dining restaurant is championing the incredible work of urban beekeeping with a permanent rooftop residence housing 150,000 honey bees and a bespoke menu of honey-based specials, courtesy of Florentine’s own honey bees – available throughout October.

Beekeeping in built-up areas has boomed in popularity and is creating quite the buzz in London. Florentine are strong advocates of urban beekeeping, with London’s mild climate and wide range of food providing a welcoming environment for the honey bees

Over the past 17 months, the Florentine team has worked closely with Dr. Luke Dixon – an expert in rooftop beekeeping and member of the British Beekeepers Association – to create a safe haven atop its fourth floor, giving the bees an opportunity to form their colonies and produce the all-important sweet-stuff.

A dedicated menu of honey specials will be on offer, Monday – Wednesday, alongside the a la carte menu.

Highlight dishes include: smoked burrata, roasted beetroot and parsnips drizzled with honey & rosemary dressing (£9), honey and soy glazed roasted duck breast with sautéed girolles (£19) and crunchy honeycomb panna cotta topped with fresh blackberries (£6).

All dishes are available to enjoy individually or as part of a three-course set menu, priced at £36pp which includes a specially created Madame Bee cocktail.

This Gin Mare based creation is made up of honey-infused water, fresh lime juice, lemon juice and rosemary and is topped with Chapel Down Brut. It can also be enjoyed on its own for £10. For every item or menu purchased, 10% of the price will go towards the Bee Friendly Trust charity.
