The modern flavours of India will be in Fortnum’s The Gallery restaurant this month, with a  menu inspired by renowned chef Vivek Singh.

The dishes, all adapted from the author’s award-winning Cinnamon Kitchen: The Cookbook, will be available as part of a special menu at The Gallery Restaurant for one week from 29th April until 4th May. Expect a selection of perfectly-spiced, flavourful dishes such as rabbit and pistachio terrine with quince chutney, dry spice-crusted guinea fowl with puy lentil salad, and spiced bannana tarte tatin.As part of his guest appearance at the store, Vivek will also be hosting an inspiring masterclass on Monday 29th April at 6pm in the Fortnum’s Demonstration Kitchen on the First Floor.

Another opportunity to delve into the authentic recipes from his new cookbook, Vivek will showcase three modern Indian dishes; grilled mackerel fillets with apple and fennel salad, smoked saddle of lamb with saffron sauce, and shrikhand cheesecake with strawberries, fennel and coriander.

Classically trained in India with the world-famous Oberoi Group, Vivek Singh has done much to challenge ingrained attitudes about his native cuisine. In 2001, Singh co-founded The Cinnamon Club in Westminster which has been redefining Indian cooking for over a decade, with the marriage of Indian spicing and western culinary styles.

The Cinnamon Kitchen masterclass costs £25, and includes a signature Vivek Singh Cinnamon Bellini. The book will be available to buy at the end of the masterclass, signed by the man himself.
