From Wednesday 15th to Saturday 18th May, leading chef and food legend Nurdin Topham will be joining the Cub team and taking over the kitchen for four special days.

mcith_cub.jpgHe will develop and serve up a one-off set menu, alongside Bruichladdich and Botanist Gin cocktails.

Nurdin has over 20 years experience and is focused on the intersection of diet and deliciousness.

He gained worldwide recognition when his restaurant NUR in Hong Kong earned a Michelin star and become one of the city’s leading dining destinations.

Prior to this he had worked with Raymond Blanc in the two Michelin starred kitchen of Le Manoir Aux Quat’Saisons, as well as working five years as the personal development chef to Raymond Blanc.

Cub offers an original and unique luxury drinks-led dining experience for guests with a strong focus on sustainability.

Opened in September 2017 at Mr Lyan’s former White Lyan site, it was born of a collaboration between Ryan Chetiyawardana (aka Mr Lyan) and Doug McMaster of Brighton’s pioneering zero-waste restaurant Silo.

Working alongside partners Krug Champagne, Belvedere and LVMH, the venue blurs the boundaries of food and drink by approaching them as a united entity, presenting Mr Lyan and Doug’s own modern interpretation of a restaurant.
