First Thursday FEAST – 9th March, Stevie Parle and Shaun Hill, recipes from’SALT’

Interior of Craft LondonCelebrating their second anniversary this year, Stevie Parle and the team at Craft London have spent the last two years constantly working to perfect their smoking, pickling and curing processes. They’ve been busy and productive: this past summer saw the first honey harvest and their Kitchen Gardens are now fully established.

This March they will launch Thursday FEASTS, a themed dinner that will change month by month and see the team working alongside great British suppliers to showcase ingredients that are in season, or work in collaboration with other fantastic chefs who share a similar ethos to create unique one-off menus.  For £45 per person, dinner will comprise of up to four courses along with a tipple.

Craft London Head Chef, Anna Garcia Cortes, will oversee the menu development with Stevie and the format will continue to develop over time, embracing the Craft London style of cooking and providing new and exciting experiences for guests at every visit.

Each month will also feature a new selection of cheeses from Craft London’s suppliers at Neal’s Yard.

In addition to the food, Craft London will be creating new cocktails using home-made ingredients, and guests should also expect some excellent wines, paired from the Craft London list curated by Ruth Spivey.

9th March – Shaun Hill & Stevie Parle will be cooking recipes from Shaun Hill’s new cookbook’SALT’

For one night only, Stevie and Shaun will be coming together to cook some of the fantastic recipes from Shaun’s latest cookbook’SALT’. Choosing from dishes ranging from Pressed Salmon with Chard & Dill Pancakes to Pork in Shirtsleeves, the two will showcase the synergy between this integral ingredient and the various curing, preserving, and fermenting processes at Craft London. Guests will be able to buy the’SALT’ cookbook at a discounted rate, with both Stevie and Shaun on hand to sign copies throughout the evening.

Acclaimed British chef Shaun Hill brings a wealth of experience to the table in his 50 years as one of the UK’s top chefs. With his frank, outspoken personality, he offers witty commentary alongside tried-and-tested recipes that get the best from their ingredients. Shaun is currently head chef at Michelin-starred restaurant The Walnut Tree and during his career, has been awarded three Michelin stars.

Upcoming Thursday Feasts

6th April – A feast centred around dishes inspired by a Mangalitsa pig that has been living in Stevie Parle’s garden in Kent, grazing on acorns and apples for over a year.

18th May – A feast celebrating National Vegetarian Week using new season and unusual British vegetables.

Notes To Editors

Stevie Parle, acclaimed chef, author, food writer and TV presenter opened Craft London, three floors of culinary surprise and excellence in April 2015.  Craft London is a partnership with Tom Dixon and designed by Design Research Studio, located in the new cultural hub of Greenwich Peninsula. The project kicked off with a café/roastery in October 2014 and the restaurant, cocktail bar and shop followed in April. The focus is on quality in production, collaborating with modern experts, fanatics and obsessives, to craft world-class products. This includes activities as diverse as the roasting of coffee, smoking of fish, bee keeping, meat curing, fermentation of vegetables and the creation of a contemporary kitchen garden.

Ruth Spivey spent 10 years travelling the world as a fashion model before starting a new career in restaurants working for Anthony Demetre and Will Smith (Arbutus/Wild Honey). WSET exams followed whilst also working around the wine trade – in independent wine retail, on trade and supply and as an in house buyer. Turning freelance in early 2013, Ruth set up the speed tasting night Flight Club, and her street food wine bar, Street Vin. The same year saw her create and launch the popular bi-annual consumer tasting Wine Car Boot, to promote London’s independent wine ships. Ruth has consulted on restaurant wine lists for Rotorino and Craft London.

Shaun Hill started cooking professionally at Robert Carrier’s iconic restaurant in Islington in 1966. He was head chef at Gidleigh Park in Chagford for 9 years, and chef patron at the legendary Merchant House restaurant in Ludlow for 10 years. In 2007 he reopened the critically acclaimed Walnut Tree in Abergavenny and, in his time there has won a Michelin star and three AA rosettes, as well as a number of other awards.
