Michelin-starred chef Michel Roux Jr in collaboration with Restaurant Associates, will be opening Roux on Parliament Square at the Royal Institution of Chartered Surveyors building, Parliament Square on Monday 10 May.
The decor of the restaurant is said to be ‘contemporary and luxurious’ using shades of dove grey and aubergine, combining period features and modern furnishings to complement the Georgian Grade II-listed Royal Institution of Chartered Surveyors building. The restaurant will seat 56 in The Dining Room, The Drawing Room and The Library private dining room. It will be open Monday to Friday 12noon to 11pm and Saturday from 6pm.
The menu at Roux at Parliament Square is said to embrace new and modern European cooking styles under their head chef, Dan Cox. We understand that it will include offerings such as loin and belly of Gloucester Old Spot, glazed heritage carrots, mustard gnocchi, and caramelised apple mille feuille with green apple and tarragon sorbet, these having been developed by Dan using modern techniques. There will be an extensive wine list, of 250 bins presenting what is said to be a diverse selection from the new and old worlds.
A separate bar, will be open from 12 noon to 11 pm daily and that they boast will comfortably seat 30 people and here patrons will able to enjoy snacks and light dishes with their drinks.
