Packed full with delicious recipes, interesting chef interviews and a useful food lover’s guide to feast your way around the county, the cookbook includes dishes and tips from Justin for you to try back home. You will also get to sample his cooking when you dine by candlelight in the elegant AA two rosette Gallery restaurant. The high timbered ceiling, minstrels’ gallery, exposed brickwork and impressive fireplace all set the scene for a unique dining experience, while a sommelier is also on hand to offer advice on matching wines from The Swan’s extensive cellar.
Featuring the finest Suffolk ingredients, the imaginative new ÃƒÂ la carte menu focuses on British cuisine with a choice of dishes for each of the five courses. Dependent on the season, to begin you might expect crab or fresh asparagus followed by sea trout or pigeon for the second course. A fish dish follows and then the mains; perhaps lamb or duck. Currently proving very popular is the venison served with chocolate sauce, spring greens and Hunter’s Pie.
