The Imperial are delighted to announce the return of curing and smoking expert Steven Lamb from the award winning River Cottage.

Following the success of the first residency last year, Steven is back to take over the kitchen of The Imperial, Kings Road and their new sister venue The Three Horseshoes in Thursley, Surrey. The confirmed dates are 27th & 28th February at The Imperial and 2nd & 3rd March at The Three Horseshoes.

Steven will bring his expertise and knowledge to create a little slice of the Dorset countryside with an 6 course tasting menu. It will reflect both River Cottage and The Imperial’s common interest of sustainability and locally sourced produce where ever possible. Dishes on the menu will include Rare breed pork crackling with fennel salt & apple sauce and Slow roasted venison shoulder, celeriac root fries & charred savoy cabbage with rhubarb-b-q sauce

Steven Lamb has been at River Cottage for over a decade and is recognised as one of the linchpins of the whole operation. He teaches on several courses at the Cookery School, specialising in curing and smoking, which will be showcased on the menu at The Imperial and Three Horse Shoes

The 6 course menu including a glass of Lyme Bay English sparkling wine will cost just £80ph. The residencies will include one dinner service on each day and will run from 6:00pm to 10:00pm. Reservations are to be made directly by phone 0207 736 6081 or by email [email protected]
