The menu, curated by Global Executive Chef Jordan Sclare and Head Chef Begonya Sanchez, includes a range of new dishes including (O-Toro) tuna and robatayaki salmon, with European and South American nuances, including smoked jalapeño chilli, persimmon (sharon fruit) and truffle. 

The opening also sees the launch of the new Tokyo to Lima cocktail menu – 10 new drinks, set to be rolled out to all Chotto Matte restaurants globally. Inspired by the evolution of Nikkei cuisine it’s designed to complement the flavours of the dishes,.
