Saltwater, a new quick-service restaurant (QSR) inspired by the takeaway sushi bars of Sydney and Los Angeles, will open this summer at 3–4 Berwick Street, Soho.
Created by the founders of Milk Beach, the concept pairs restaurant-quality sushi with the speed and convenience of takeaway.
The menu has been developed by former Endo at the Rotunda* and Hakkoku* sushi chef Shaulan Steenson, alongside Executive Chef Tom Cajone (Parakeet, Granger & Co, Zafferano*).

Serving freshly made handrolls, nigiri and hot donburi bowls, Saltwater aims to raise the standard of London’s takeaway sushi. While the capital’s premium sushi scene has flourished, the quick-service market remains dominated by pre-packaged offerings. Saltwater offers a fresher alternative, with all food prepared to order and in full view of customers.
At the heart of the concept is a counter-service format where guests can choose individual handrolls and nigiri, creating a bakery-style experience rather than selecting from pre-packed boxes.
Handrolls include bluefin tuna with avocado and fermented chilli, and chicken schnitty with avocado and spicy mayo. Nigiri options range from seared Norwegian salmon with miso glaze to hamachi with jalapeño and ponzu. Freshly made donburi bowls include sesame miso chicken, teriyaki chicken schnitty with Kewpie mayonnaise, and fried aubergine with maple black vinegar glaze.
Saltwater sources its seafood through leading supplier True World Foods, which supplies restaurants including Nobu and Roka and is accredited by the Marine Stewardship Council (MSC) and Aquaculture Stewardship Council (ASC). Bluefin tuna comes from Balfegó in Spain, while salmon is sourced from Scotland, Norway and the Faroe Islands. The restaurant also uses premium short-grain rice from South Korea’s Hadong region, chosen for its clean flavour and soft texture.
Sustainability is central to the concept. Saltwater has partnered with UK company Notpla to develop seaweed-based, plastic-free packaging as an alternative to conventional sushi containers.
Located on Berwick Street, the 50-seat restaurant has been designed by Macaulay Sinclair (Dishoom, Hawksmoor, Bao). The double-fronted space features large opening windows and bright, relaxed interiors inspired by the feeling of stepping off the beach.
