On Wednesday 20 April, Gaucho will launch a Sustainable Supper Club series at their newly reopened Charlotte Street hotspot, ahead of World Earth Day on 22 April.
This is the first restaurant in the Gaucho group to serve exclusively carbon-neutral beef, part of Gaucho’s vision for running sustainable restaurants.
The Supper Clubs will run on the second to last Wednesday of each month. Guests will be able to enjoy a four-course feast for £50 per person with a zero-waste drinks pairing for an extra £20 per person, with every element embodying Gaucho’s sustainability principles.
Each month, a different bespoke menu will showcase underutilized cuts of meat, locally sourced and seasonal herbs and vegetables and a range of environmentally-minded drinks brands.
Each monthly Supper Club will also introduce a fresh sustainable element, ranging from the uniforms worn by staff to the crockery and table linen used on the night. Live music will accompany each Supper Club, showcasing the talent of local musicians.
On 20 April, the very first Supper Club will begin with Zero waste sourdough with sobrassada butter will be served alongside a glass of Cotes & Seely Brut, an English sparkling wine locally produced in Hampshire.
To follow, Grilled ox heart fazoletti with artichoke puree, spring herbs and browned butter will be paired with a cocktail of Brown butter Bulleit bourbon, maple spice and Angostura.
Diners will then be treated to a main course of carbon-neutral beef with the Entrana, fried pomme anna and English garden chimichuri alongside a cocktail comprising Discarded Spirits Co. Vermouth and Campari. The sustainable feast will conclude with Goat’s milk cheesecake, London honey, spiced berries and nut crumb paired with a concoction of Cinnamon Pampero Blanco, Drambuie, Discarded Spirits Co. Vermouth and honey espuma.
