I’m a big fan of cheese. Who isn’t right? And when I heard about the latest cheese combo in town, I simply had to try it out for myself. I’m not talking about blue cheese and dates, even though I do believe it is possibly THE greatest discovery since pork scratchings. I’m talking about a cheese and a hotel. Bear with me…The Waldorf Hilton has partnered up with the Stilton Cheese Makers’ Association to create a special menu featuring the classic English cheese.

Brits are celebrating their national identity now more than ever and this is a great way to celebrate a local product. Not only can you indulge in your wildest cheese dreams but you can do it in the ultimate style and comfort at Waladorf Hilton’s Homage Grand Salon Restaurant. Executive Chef Johan Rox has managed to infuse Britain’s beloved Silton into a variety of different dishs on the three course menu available at Homage.

The best thing is that Chef Rox hasn’t gone crazy. He has handled the brief with subtle flair, creating dishes like the very popular Stilton, Serrano ham and Quail Egg salad. This dish has a lovely fresh texture and flavour, that carries the Stilton’s spirit without overriding it. The cod fillet with a stilton crust served with Mediterranean vegetables was a surprising pairing of fish and Stilton and one that was executed with understated delicacy.

My favourite dish on the menu by far though, was the Cranberry and Walnut pie with Stilton Crust. My only complaint was that it was just a tad too small. I wanted more. The plate was decorated with a mouth-melting jelly and dehydrated pomegranate seeds which looked lovely but the flavour and texture of the pie was really quite special. And I don’t mean special as a euphamism for failure, I mean it in the literal sense. I’ve never tasted anything like it and while I could defintely place the piquant, savoury note of the cheese it was not at all out of place. On the contrary it has restored my faith in the use of savoury ingredients in sweets.

If you want to try the Stilton menu at the Hilton but your partner or friend is not interested in Stilton infused food, firstly you should question your relationship with that person. Do you want to be with someone who doesn’t love blue cheese? Secondly, take them along anyway, there is generally only one stilton dish per course and there is plenty of non-cheese related items to choose from.

The Waldforf’s Hilton-Stilton marriage is full of passion but alas they will not grow old together. The Waldorf Hilton only offers this exciting menu until the end of February.
