Often relegated to the salad bowl but endlessly verstatile, the apptly name Many Faces of Potatoes shows you how to BBQ-up your potatoes this barbeque season.

BBQ Potatoes

Prep time: About 5 minutes  Cook time: About 25 minutes                                  Serves 4                        

INGREDIENTS:  4 medium Smooth potatoes (such as Desiree), cut into wedges  1 onion, peeled and cut into wedges  1 red pepper, cut into wedges  1 yellow pepper, cut into wedges  2 eating apples, cored and cut into wedges  2tbsp olive oil          BBQ Sauce:  4tbsp tomato ketchup  1tbsp malt vinegar  1tbsp mustard  5tbsp orange juice           METHOD:  Step one: Preheat oven to Gas Mark 6, 200ºC, 400ºF  Step two: Place all ingredients (except those for the BBQ sauce) into a sandwich bag, and toss to coat  ingredients in oil, before spreading out into one single layer on a baking tray  Step three: Place in oven and cook for 25 minutes until browned and tender  Step four: Remove from oven and place in bowl to serve  Step five: Place all ingredients for the sauce into a saucepan, bring to the boil  Step six: Place in a separate bowl and serve as dipping BBQ sauce  Not suitable for home freezing.
