Summer is on its way at last! Here from the Fruisana Kitchen is a really tasty, and unusually spicy way to serve fresh pineapple for a healthier dessert. The Fruisana will enhance the flavour of the pineapple and the chillies.

And, of course, if the weather decides to be kind to us, it will be even more delicious with the final stage cooked on the barbecue at the end of the meal, when the coals start to cool down€¦€¦

Serves 8

1 large ripe pineapple
100g butter
50g Fruisana Fruit Sugar
2 small dried chillies, finely diced
½ tsp ground black pepper

1. Peel the pineapple, remove any €˜eyesÂ’ and then cut the pineapple in half lengthways, then into half again. Remove the centre core from each quarter then cut each piece into chunks, 6 – 8 per piece.
2. Melt the butter, stir in the Fruisana, chillies and pepper. Mix well.
3. Brush each cube of pineapple with the butter mixture. Heat a frying pan and then carefully heat the pineapple, adding more butter mixture as necessary.
4. Place on a baking tray and cook in an oven fan oven 160°C, electric oven 180°C, gas oven mark 4 for 1-15 minutes until crispy on the surface.
5. Serve with ice cream.
