One of three recipes using the fabulous olive oil of Castillo de Cana

(for 4 people)

• 500ml water
• 200g sugar
• 20 sprigs of fresh thyme
• The juice of 2 lemons
• 4 tablespoons of honey
• 4 teaspoons of Family Reserve Arbequina extra virgin olive oil

Mix all the ingredients together, except Family Reserve Arbequina, and simmer gently for fifteen minutes. Bring to the boil. Strain the ingredients into a container, and after cooling, place in the freezer for a few hours.

At the time of serving, scrape and stir the sorbet with a fork and serve in well-cooled glasses accompanied with grated lemon rind, a teaspoon of Family Reserve Arbequina and some thyme sprigs for decoration.
