From 7th – 11th July, to coincide with nearby Hampton Court Flower Show, diners at the Bingham restaurant in Richmond, recently awarded its third AA rosette, will be able to enjoy head chef Shay Cooper’s special floral tasting menu, an opportunity to sample six courses of Shay’s cooking, with a flower theme. The menu is priced at £55, and will be available in the evenings.

Shay’s cooking style is Modern British and his dishes tend towards the delicate, deftly built around one main, seasonal ingredient. Dishes on the floral tasting menu include:

White bean soup with honeysuckle and summer truffle
Hand dived scallops, ricotta gnocci, cucumber jelly, broad bean flowers & shoots
Organic sea trout, Dorset crab, courgette flower tempura and gazpacho vinaigrette
Slow cooked suckling pig, fennel and apple puree, pigs trotter croquette and fennel pollen
A selection of British cheeses with beetroot and hibiscus compote
Bitter chocolate tarte with elderflower syrup, cherry and jasmine ice-cream

Situated in a chic Georgian townhouse on the banks of the Thames at Richmond, the Bingham restaurant benefits from large picture windows offering stunning views out onto landscaped gardens and along the river. Recently refurbished, the interior is contemporary and elegant with muted gold against biscuit shades enhancing the original features to create a graceful ambience. Al fresco seating is available on the heated terrace to take advantage of the long July evenings.
