Specialist Italian cooking school La Cucina Caldesi in Marylebone is holding a unique class focussing on the ‘umami’ taste sensation in Italian cooking. Discovered relatively recently by a Japanese scientist; umami means tasty (saporito) – the most important taste sensation of them all. The concept of the 5th taste is now being recognised by us here in the West and Italian cooking uses lots of umami food, such as truffles, mushrooms, Parmesan, Parma ham, tomatoes and anchovies . All the recipes prepared during the class will demonstrate this intriguing fifth taste.
