The Park Restaurant, Lucknam Park

I’ll lay my cards on the table from the off: I think Hywel Jones is one of the UK’s most exciting chefs. In fact let me go one step further: last night I had one of the most enjoyable meal of my life (and I’ve darned lucky enough to have been to some of the best). The Park is one of the best (as far as I’m now concerned).

ecoffee – it doesn’t cost the earth

With ecoffee you get a choice and the chance to feel morally comfortable too. The ‘e’ in ecoffee doesn’t mean it’s delivered via the interweb but stands for environmentally conscious. The coffee is grown on bio-diverse farms under the rain forest canopy and the coffee plants grow amongst trees and other foliage so that they are a natural part of the eco-system.

Warm Salad of Grilled Peach, Pancetta & Halloumi

Fruit is sweet and plentiful during the summer months and being the kind of ying and yang person that I am, wherever there is sweet, I tend to crave salt to go with it. This week’s recipe is a perfect example of bringing salt and sweet together through a simple fusion of fruit, cheese and smoked pancetta.
